Tasting Notes: Smooth, balanced cup with some vanilla aroma, a noticeable taste of strawberry and hint of cedar on the back end
How We're Roasting It: We are keeping this coffee at a light-medium roast. "Natural" processed coffee means that the coffee cherries are left to dry out in the sun, allowing the sugars from the fruit's flesh to seep into the beans at the center of the cherry. This aged natural coffee stays in this drying state for an extending period of time, adding more complexity, sweetness, and fruitiness to the beans. Those are the notes we are trying to preserve by keeping this profile on the lighter side.
From the Importer: "Heavy aromas of strawberry, cherry, and cedar with a fermented flavor of a Madagascar chocolate bar and funky ripe stonefruit. ... [Ramirez Estate in Ciabao, Dominican Republic] is extraordinarily socially conscious. They use fermented coffee cherries to create natural gas, which partially powers their operation. They also donate books and computers to the local schools, and in a more rural area, they built and funded a new school preventing small children from having to walk over 15 km each way to class. They also help Haitians obtain legal residence in the Dominican Republic, in order to receive fair wages. We pay roughly 300% higher wages to this Estate for their exceptional care of the environment, organic certification, care for local Haitian immigrants, and high cupping scores."
